First, I have had the WORST luck with pastry cream. I've tried to make it at least three times previously and I've failed each and every one of those times. I always wind up with runny, thin pastry cream and no one wants that. So I did some research before I tried this week (mainly to figure out what temperature I should cook the pastry cream to because I've always struggled with "until it coats the back of a spoon") and yay, it worked! I've always been afraid to cook the pastry cream too long for fear that I'd wind up with scrambled eggs, but Dorie's recipe yielded a thick, velvety cream that both smelled and tasted amazing! The addition of the cinnamon and nutmeg really warmed it up and I love that she uses brown sugar instead of granulated.
Like just about everything I bake, I passed this pie along for others to enjoy (hence the reason I don't have any pics of a slice cut from the pie). Since I waited until the last minute to finish it up I don't have any reports back yet on whether it was enjoyed. I feel pretty confident that it will be as I tasted all of the individual components and they were fabulous, including that homemade whipped cream, which is one of my favorite things to make (and eat straight from the KA mixer bowl!). Safe to say I'll be making this one again for sure, perhaps around the holidays since the addition of the spices really made me think of fall/winter.

What a beautiful pie. Nicely done. This recipe scares me too and I want to make it, but just won't work this week, my family is visiting and they have their own baking requests.
Love the way the whipped cream looks piped on there, beautiful!
Tracey!!! Can we talk about how perfect that pie is for a second?!?! What do you MEAN you don't have any confidence in your pie making skills? That crust is perfection! I can NEVER crimp my crust edges to look like that! And the piping? Oh, the piping! Gorgeous job!
Ahh I love the topping. Great job! Your pie looks so good!
Wow, your pie is so pretty! LOVE IT!
Very nice piping! And the crust looks great. Glad you got over your fear and that it worked out.
This pie was indeed beautiful. The whipped cream stars were perfect and the texture was smoooth and creamy. I like banana but the added mix of cinnamon and nutmeg really made the flavor exceptional! Definitely should be on the list of go-to recipes and
would would be a great holiday pie.
You did a wonderful job on your pie crust! Your crimped edges are so perfect! Great idea to pipe on the whipped cream.
I'm glad the pastry cream worked for you! Love the design of your pie
I love your pie. You made such an average pie look so pretty and dainty. Perfect for a light, spring time dessert.
I love, love, the look of your pie! Well done on that piping!
Beautiful pie.
That is one gorgeous looking pie! Thanks for baking with me this week!

This is such a pretty pie, it's flawless :).
Nicely done! You'd never know there were problems with it - looks delicious! Love the piped stars!!! I'd give it an "A"!
I am so jealous of that crust! I still can't flute my crusts. Great job!
So pretty. It looks great.
It looks so beautiful with all those little stars done so perfectly! Very nice...and that pie crust looks lovely also. Great job, Tracey!
What a perfectly decorated pie you made! Wow!!!
P.S. Don't forget to enter my giveaway!!
Beautiful piping!
I love the way you decorated the pie. It looks wonderful. I'm glad the pastry cream worked out for you.
I envy your decorating skills! As for the pie crust, when I actually take the time to do it, one trick that really helps with the shrinkage is to fit the crust into the pan and then freeze it again for 20-30 minutes before baking. And be sure to use pie weights.
Let's talk about your crimped edges, OK? How do you get Dorie's crust to stay crimped? Mine started out looking a lot like yours but melted into smoosh in the oven. And you have more patience than I do with all that piped whipped cream. I'm not even going to mention how envious I am of that smooth pastry cream...

woww, your pie looks beautiful!
i had a little trouble with the custard too, but it all came together in the end!
great job!
Oh, man--you over achiever, you! All those pretty little dots of whipped cream...brilliant.
This looks beautiful! I love the way you decorated it.
I am not a fan of banana...but I love banana cream pie, and the way that you decorated is just so beautiful.
Wow, the piped topping looks amazing, and so does the pie crust--great job! I'm sure the recipients were very happy.
You decorated this beautifully. So professional. I love t. bet it was just dee-licious..
I loved reading about everyone's experience with this pie. I especially liked the way you decorated it. Great job.
Wow! Your pie looks gorgeous. Looks like you totally conquered your fears. The pie not only looks delicious, but your decorations are just stunning!
Wow! Your pie is gorgeous! You did a fantastic job!
I love the way your crust turned out! I know you said it shrunk a bit, but it really looks great in the end. Nice job with the whipped cream, too!
your banana cream pie is probably the most beautiful i've ever seen :) love the stars.
glad you overcame your fear of pastry cream...wasn't it delicious?
I'd say you are getting the hang of pie crusts pretty darn quickly. I bet it tasted so much better than a purchased crust too. I never take an intact dessert anywhere anymore. There is always one piece missing for documentation purposes!
Your pie crust looks great! I also love the fancy pipe work, too!
Next time, save me slice! ;)
Great lookin' pie there! Love the piping job.
Great looking pie! Doesn't seem like your crust shrunk very much at all. I'm sure your friends will enjoy the pie.
Great job on this! Your whipped cream stars are lovely.
Your pie is one of the prettiest I've seen. It is absolutely perfect. You worked magic with that pie crust! And your piped whipped cream is gorgeous. I was happy enough that mine tasted good, but yours looks great as well!
Your pie is perfect! that is one of the best looking Dorie crusts I have seen.
That Pie Crust looks perfect. Great job. Looks like it didn't shrink and your whipped cream topping looks just fine.
