This week's SMS was chosen by Andrea of Nummy Kitchen: peach cobbler! I love almost any baked fruit dessert so I was psyched about this week's recipe! That said, I did have my reservations about the peaches. Last year we made a summer fruit galette for TWD and I chose to use only peaches in my galette. The first step in the recipe was removing the skins of the peaches and, to put it mildly, it did not go well for me. It's left me a bit traumatized when it comes to peaches but I was hopeful this experience would go a bit better.
I decided to scale the recipe down quite a bit as I was the only one who would be eating the cobbler. I wound up making 1/4 of the recipe since it was fairly easy to do the calculations in my head. I made the biscuits first and learned that 1/4 of the biscuit recipe was enough for either one large biscuit or two small ones. Due to their cuteness factor, I went with two.
Next came the peaches. I blanched them as I've read I should do but still, those skins just didn't want to come off. If anyone has tips on how to remove the skins from peaches, I'm all ears! Fortunately, since I was only making 1/4 of the quarter, I didn't have to peel many peaches. I used a combination of brown sugar and white sugar in the filling after seeing Holly's post this morning.
After the cobbler baked, I put the world's smallest scoop of vanilla bean ice cream on top and dug in. I really, really enjoyed the biscuits but the filling was a bit too sweet for even me, which is saying a lot. I can probably count on one hand the number of times I've found something too sweet. I still ate the whole thing though and thought the vanilla bean ice cream was the perfect accompaniment. I'll definitely make this again once peaches are in season here - I'll just cut back on the sugar in the filling a bit.

Your tiny biscuits and ice cream scoop are really cute! It's too bad that you were traumatized by peaches, though. I usually use a vegetable peeler when peeling any types of fruits, if that helps. Still, your cobbler looks really yummy!

Im right there with you on the sweetness of this cobbler. It has way to much sugar. I loved the biscuit part the best. I can't remember where I got my biscuit cutters, sorry. I pick stuff up all over the place. I love finding little kitchen stores when Im out of town.

Maybe your peaches need to go another day or two to ripeness? Mine peeled super easy for the peach desserts I made this week. I basically took a paring knife, cut them in quarters from pole to pole and the skin came off of most of them in one piece.
Looks great and I'm glad this one didn't leave you traumatized! I made quite a mess peeling the peaches, too, so I don't have any tips to lend you.
i used less sugar too. i peeled the peaches with a veggie peeler -- i hate peeling everything.
The addition of ice cream is YUMMMMMMM!

Your peach experiences sound harrowing. Peach peeling is hard but if your get the water boiling and drop the peaches in for a little longer each time your struggle peeling the previous peach, eventually you will get a peach that the skin slips right off of. It looks so yummy, Tracey! I agree, peaches are such a pain to peel. Mine weren't ripe enough so I just peeled them with a veggie peeler and it wasn't too bad. My grandmother usually sits down at the table with a bunch of newspaper (so the table doesn't get sticky) a big bowl, and a paring knife and goes to town. I've tried blanching in the past but it's never worked for me. But, I think that the result is worth the peeling, don't you?
Your cobbler looks wonderful! The only way I know of to make the skins come off easier is to blanch them as you said. Maybe leave them in the water a little longer? If you're baking the peaches anyway, it shouldn't matter if they get a little soft.
Here's my tip: after you blanche the peaches, immediately put them in ice water. It's the ice water step that actually makes the skin easy to come off, I think, because of the sudden change in temperature. Either way, once you take the peaches out of the ice water, the skin practically slides off.

I find that peeling peaches is really hit or miss. I find that the best way to peel peaches is to make somebody else do it! That works pretty much every time!
Tracey, thank you for baking along with me, your mini cobbler with ice cream looks just perfect. I ended up not peeling the peaches, at first I thought about it, but was kind of intimidated, so figured since the variety I used were really thin skinned it wouldn't be a problem to leave them on. If I hear about a fail-proof easy way to peel peaches you are the first one I will tell :)
