SMS Pound Cake

This week's SMS was chosen by Michele of Veggie Num Nums: perfect pound cake! I debated about whether to make this recipe as written or change it up a bit since it's such a wonderful blank slate. In the end, I decided to go with just a few minor modifications. First, I substituted almond extract for about 1 teaspoon of the vanilla extract. Also, I used an idea for a vanilla-sugar glaze I'd seen in one of King Arthur Flour's recipes for pound cake. The glaze consists of a combination of sugar, water and vanilla extract (I used half vanilla extract and half almond extract) and is drizzled over the top of the batter before the cake is baked.

I cut the cake this morning to try it and thought it was fantastic! The crumb is perfect and though the cake was dense, it wasn't dry. I loved the glaze I'd added - it really gave the cake a sweet, crunchy top and those were undoubtedly my favorite bites of the cake. Thanks to Michele for a great pick this week! I love the idea of putting the glaze on the cake before baking it - and it seems to have worked, since the cake wasn't dry. I'll have to try that!

I have put a glaze on a warm cake and also a cool one but not before baking. Sounds wonderful. I also like the addition of almond too. YUMMY!

Yum yours looks great..No fair it wasn't dry..mine was really dry. I ended somthering it with Choke Cherry jam and it tasted good!

I did a lemon syrup for mine. I wish I'd had a little more. Mine was still a little on the dry side!

Beautiful pound cake! Mine turned out a little on the dry side, so it definitely could have benefited from a nice pre-glaze like that, what a great idea.

my cake has these weird little wingtips were it leaned up on the loaf pan, any idea how to avoid that?
