This week's SMS was chosen by Cristine of Cristine Cooks: apple orchard pecan crumble! I am a huge fan of apples in desserts, including apples crumbles and crisps, and I have a ton of apples from a recent trip to the orchard so I loved this pick. Another fantastic thing about this recipe is how easy it is to make individual servings, which really helps since it's just me and Shane at our house and he doesn't eat apples. I halved the recipe (well, the apple portion - I made the full crumble recipe) and wound up with one small ramekin, 2 medium ramekins and a small au gratin dish. The 2 medium ramekins immediately went into my freezer and I can't wait to bake them up for dessert later in the week!
I modified the recipe just a bit this week. I don't like pecans so instead I used a combination of cinnamon chips and some old-fashioned oats in the crumble topping. I also added raisins to the filling. Sarah had mentioned that she didn't use any sweeter in the filling and thought it was terrific, and while I wasn't brave enough to leave it out entirely, I did halve the sugar. I baked the small ramekin and au gratin dish this morning and had the small ramekin as a late breakfast. It was awesome! I loved the recipe. The only thing that I think could make it even better would be a scoop of vanilla ice cream :)
