
This week's Tuesdays with Dorie was selected by Rhiani of Chocoholic Anonymous: coffee-break muffins. Here's the thing...I don't drink coffee - ever. We don't even own a coffee pot at our house. Growing up I remember seeing my mom and my grandparents drink coffee all the time and I remember thinking that someday, when I was an adult, I too would drink coffee. It didn't happen when I went to college, and even though everyone told me I'd become a coffee drinker in law school, it didn't happen then either. At this point I think it's safe to say I'll never like coffee :)

That said, I do usually enjoy coffee-flavored treats (coffee ice cream is one of my favorites!) so I definitely wanted to try these muffins. Dorie uses coffee rather than milk to moisten the muffins and also includes espresso powder to impart even more coffee flavor. I always have espresso powder on hand but like I said, no coffee pot here, so my muffins didn't include the cup of coffee. I made half of the recipe and ended up with six muffins, which baked very quickly - about 12 minutes rather than the 20 the recipe suggests. For some reason I substituted water (rather than milk) for the coffee in my muffins and as a result, they were lacking in flavor a bit. Totally my fault and next time I'll probably use milk and also add chocolate chips to the recipe. The texture of the muffins was perfectly moist and tender, definitely a keeper.

The coffee-less muffins look yummy, even without wonderful, lovely coffee in them! I was only an occasional coffee drinker until I had kids. Now...one cup, every morning.
I bought some of the Starbucks Via instant packets for a houseguest, and it turns out they make pretty decent coffee for baking, if you want to use it in a recipe and not buy a coffeepot.
no wonder they're so pale - no coffee! lol. I feel the same way about bananas. I don't like eating them except in baked goods. I made mine into coffee cake with chopped chocolate bars on top! Tia @ Buttercreambarbie
No coffee flavor. I guess you could substitute apple juice and it would be good. If you are a dried fruit fan, add some dried apricots or dried blueberries.

Also not a coffee drinker, but do like the taste in some things. Love the plate the muffin is sitting on.

I liked these. They had a flavor that reminded me of fall baking. I think the flavor would have been enhanced with the additional coffee but still tasty without.

Lovely photos! If you don't mind a little more coffee taste, you could make a cup of instant espresso to use for the coffee in the recipe.

I remember making my mom an entire pot of coffee for her Saturdays and loving the smell. But the taste... blegh! Not to mention she liked her's super strong! I can only stomach coffee if there's an ungodly amount of milk, sugar and flavoring in it (aka: Starbucks) but I do LOVE coffee flavored treats!

I'm glad you liked these enough to give them another shot, even if you aren't a coffee drinker (I'm not either, but I love coffee flavor in a lot of sweets).
Well they look good. I went with hot cocoa AND added chocolate. They are a good muffin, but I don't do coffee anything. Sometimes I'd like to, because I like the smell, but that's about all.
I'm not a coffee person either but these definitely look like they are worth a try. Yours look so pretty.
I don't know if you drink tea, but that's what I used in mine, and it worked pretty well. Or maybe just use more espresso powder to up the flavor. In any case, they look great!

Definitely a treat with chocolate inside of them. I couldn't stop myself from eating them!
