
I've completely lost my baking mojo in the past few weeks. I can count on one hand the number of goodies that have been made in my kitchen. Baking 4 desserts over the course of a few weeks might still sound like a lot to you, but compared to my "normal," it's definitely not. I suspect I'm probably just burned out from all the holiday baking I did, though I haven't experienced that in previous years so I'm not sure why all of a sudden it's happened. Fortunately I haven't entirely lost interest in the kitchen; we've tried a ton of great new savory recipes lately that I'm looking forward to sharing with you this week. I just hope my desire to bake returns before we run out of Christmas candy to snack on :)

This vanilla-scented granola was one of the treats I made to include in my Christmas packages this year, and while granola doesn't generally excite me all that much, I really enjoyed this one quite a bit. I even kept a bag for myself and have been eating it with Greek yogurt for breakfast many mornings. All of the vanilla extract gives it a nice floral sweetness and texturally it has just the right amount of crunch. Like all granolas, it's highly adaptable too - you could easily substitute your favorite nut or dried fruit. I think my next batch might include coconut flakes as well, so definitely feel free to make it your own.

Vanilla-Scented Granola
adapted from Bon Appetit, March 2002 (via Epicurious.com)
4 cups old-fashioned oats
1 cup pecans
1/2 cup packed light brown sugar
1/4 teaspoon salt
1/8 teaspoon ground cinnamon
1/3 cup vegetable or canola oil
1/4 cup honey
2 tablespoons granulated sugar
4 teaspoons vanilla extract
1 cup dried cranberries
Preheat oven to 300 F. Line a rimmed baking sheet with parchment paper.
Combine the oats, pecans, brown sugar, salt and cinnamon in a large heatproof bowl. Add the oil, honey, and granulated sugar to a small saucepan. Set over medium heat and bring to a simmer then turn off the heat and mix in the vanilla extract. Pour the hot oil mixture over the oat mixture and use a rubber spatula to mix until the ingredients are well combined.
Spread the granola on the prepared baking sheet. Bake for 30 minutes, or until the granola is golden brown, stirring occasionally. Let the granola cool then add the dried cranberries and stir to incorporate. Store in an airtight container at room temperature.
Makes about 8 cups

I have to agree, granola doesn't excite me, either. =) But the ingredients in this one sound pretty good, so maybe I'll give it a try. I like your suggestion of eating it with yogurt--I definitely don't like to eat it with milk, like cereal.
I don't really eat granola, but this sounds nice. I like the ingredients put into this one, and I think adding some coconut would be a nice touch too.
I'm so burnt out too. I'm afraid everything on my blog this week will be savory. Gah. What do you do though?
My boys LOVE homemade granola, especially when it includes cranberries! I need to make this for breakfast one day this week. Then I'll have something not-savory to post! ;)
Oh I'm so glad you posted this! We just finished our christmas treat yesterday and I even told Rick that I'd have to email you for the recipe because you hadn't posted yet. Great timing. That was really delicious. I was having it with my greek yoghurt as well but found myself eating too much of it before Rick had even tried it. He loved it too. Now I've got to go check my pantry for pecans...

Yum. This looks great. Try the house granola from Heidi Swanson's super natural every day book. It is my all-time favorite.
I love vanilla-scented anything...one of my favorite body washes is Warm Vanilla Sugar, so I am betting I would love this. BTW, the compulsive in me just wants to sweep up all those spilled bits of cereal...you are going to drive me crazy with photos like that...I just want to clean it all up immediately and not worry about it anymore. lol

I really like this recipe! I've been wanting to make my own granola, but all of the recipes I've found usually require ingredients I don't keep on hand (flaxseed, for one). This sounds perfect and really easily customized! :)
I've kind of lost my desire to bake sweets as well. I ate so many of Christmas and New Years that I've lost most of my cravings for it. But I believe it will be back in full strength very soon. In the mean time this granola looks as good as can be.

you had me at the title of this one---i can practically smell it through the computer :) granola + banana + yogurt is one of my all-time favorites!
Greek yogurt and granola with a tiny bit of honey is one of my go-to breakfasts. And I love when I have it with homemade granola. It's so easy to make but a great treat and yours here looks perfect.
I'm with you on the baking mojo thing. It's been a little slow around here too. I'm sure it won't last for long!
I like the simplicity of this granola recipe. I remember making granola for SMS and how many ingredients were involved. This is more up my alley.
