Cheesy Quinoa Bites

About two years ago, I picked up a box of quinoa on a whim. We are white rice addicts, and I was trying to incorporate some new, healthier options into my diet (just me, Shane was not on board for this little experiment). Quinoa was all the rage at the time (it's a superfood, after all), so I decided to give it a shot. And truthfully? I hated it - bitter (even though I rinsed it well) and flavorless were two words I would use to describe it. I was confident no amount of tinkering with other combinations of ingredients would make it palatable for me. That box of quinoa quickly made its way to the back of the pantry, and wasn't seen again until just a few weeks ago when we completely emptied the pantry to clean it.

Discovering that quinoa got me thinking that maybe it was time to try again. I do this periodically - reintroduce foods I think I don't like just to confirm I'm still not a fan. I've found myself converted on coconut, red peppers and grapefruit, to name just a few. Why not quinoa? I picked up a new box the last time I was at Trader Joe's and got to work looking for ideas. I remembered these cheesy quinoa bites Shanon of The Curvy Carrot had recently posted about and decided to try a take on them. When was adding cheese to a dish not a good idea?!

Cheesy Quinoa Bites

These are really super simple and highly adaptable. You combine cooked quinoa with your favorite cheese and veggies and a few eggs (to bind it all), drop tablespoons of the mixture into in a mini muffin pan and bake. And then, cross your fingers, take a bite and hope you now like quinoa so you didn't just waste all that time chopping and shredding :) The good news is that I did enjoy these - they were a filling lunch for me quite a few days. I'm still not on the quinoa bandwagon though. For now, it's something I'll eat occasionally because I know it's a healthy choice, but all things being equal I'd still pick the white rice 99.9% of the time. Baby steps, I guess.

I served the quinoa bites with the only dressing I had in my fridge, ranch. I definitely liked them better dipped in the dressing. Also, I froze the leftovers after baking, and reheated them in a 350 F oven (simply on a cookie sheet, I didn't bother popping them back in the mini muffin pan), which worked great.

Cheesy Quinoa Bites
adapted from So Very Blessed

2 cups cooked quinoa
2 large eggs, lightly beaten
1 medium carrot, shredded
2 scallions, finely chopped
2 cloves garlic, minced
1/4 cup chopped fresh parsley
1/2 cup grated cheddar cheese
2 tablespoons all-purpose flour
1/2 tsp salt
1/4 tsp freshly ground pepper

Preheat oven to 350 F. Lightly spray a mini muffin pan with nonstick cooking spray.

Stir all of the ingredients in a medium bowl until well combined. Use a small cookie scoop or tablespoon to divide the mixture evenly among the wells of the pan - you can fill them all the way to the top. Lightly press down to make sure each well is packed.

Bake for 18-20 minutes, or until the bites are golden and set. Remove from the wells and serve, with dipping sauce if desired.

Makes 24 bites

I think we like the same foods! We just had these a while ago and served them with avocado dip and tomatoes and they were pretty darn good. It's a great way to use up qunioa. I love you photos!

I'm glad you found a way to tolerate quinoa! It can be tricky, for sure. I always cook it in broth, for one thing. And you can never go wrong with cheese.

I made these same ones and they were good, REALLY good with some ranch ;) I did the same, froze some and reheated later. They were a nice quick, easy snack or dinner served with a salad.

I heart quinoa. In fact I just had it for dinner tonight. Cheesy quinoa--just not in balls and not baked and with steamed vegetables. I don't see why i wouldn't like this

I am not 100% on board the Quinoa bandwagon yet either. I did put some cooked Quinoa in with meatballs last night, and that was really good - you couldn't taste it at all, just added nutrition.

I love quinoa! I've tried a buffalo version of these. If not doing a quinoa side dish, I make quinoa cakes/burgers (http://eatingwelllivingthin.wordpress.com/2010/11/01/love-my-quinoa-burger/) and my now 2-year-old ADORES them. He would eat 10 if I'd let him! I just double the seasonings, use a mix of zucchini and carrots, and YUM.

i'm glad you're willing to try things you don't like again--it's how i discovered i DO like olives and pickles :) these are so cute--and i'm guessing you could try all sorts of cheeses in there!

So good of you for trying to like things that you don't. I think I'm lucky that I love most healthy food. It makes eating it much easier. :) I think this recipe would be the perfect way to start converting someone to quinoa. It looks pretty tasty.

Thank you for posting this recipe. I just made for lunch and my 2 boys (6 and 7) ate it! I added nutritional yeast and sunflower seeds for a bit of crunch. I also added some red peppers for color. Very good thank you!

My favorite way to eat quinoa is definitely in salad form, it takes on whatever vinaigrette flavor and can easily be changed up (I made a black bean, corn and pepper one w line vinaigrette) so good! It's also good as a filler in enchiladas.
I have to try these! It may be a way to get my kids to eat quinoa, I love how easy they are to make in those muffin tins!

Kudos for trying quinoa again. It's hard to go wrong with cheese and ranch dressing. ;) I didn't think I'd care for quinoa either but it surprised me and seems to take on the flavors of what it's paired/cooked with. But I totally understand picking rice over quinoa!

These look fabulous! Sorry if this question seems silly - i've never tried/cooked with quinoa before! When you add it to the ingredients, is that in "dry" form, or is that after it's cooked/boiled? Thanks, can't wait to try these!

@Kristina - Not silly at all! I'm still a newbie to quinoa as well. You want to cook it first before you use it to make the cheesy bites. If you check your package of quinoa it should have instructions on how to prepare it.

Hi, Tracey, I made this recipe today and it's really good.
I don't like cooked quinoa either, but try adding some to your rice. The strange quinoa taste disappears.

I made an modified version of this yesterday to adjust for what I had...shallots instead of green onions and coriander instead of parsely. I omitted the carrot and added a little bit of cumin. They turned out great and everyone loved them..including my small boys! Thx for sharing...will be making this often!
