Well, I held out as long as I could guys, but now that we're into the second week of September I couldn't resist sneaking in a little bit of fall baking. The temperatures have cooled down just a tad, and with football on tv, this was the first weekend it really started to feel like fall to me. I always turn my attention to apples first, and this year is no different. Apples are so versatile, perfect in both sweet and savory applications; I think it only makes sense to show them some love in September before turning to all things pumpkin in October :)
I decided the first apple treat out of the gate had to be epic, and this apple-spice layer cake with goat cheese frosting checks all the boxes. I'm probably a little biased, but I think it's a stunner! A moist and fluffy, triple layer apple cake flavored not only with homemade applesauce but also traditional fall spices like cinnamon and nutmeg. The creamy goat cheese frosting is a little outside of the box, but if you're a goat cheese fan, you'll love this tangy, sweet concoction! And if not, feel free to go with cream cheese frosting instead.
I'm sharing the recipe for this amazing cake over at Baked by Rachel today as part of her Apple A Day party. For the second year in a row, she's dedicated the entire month of September to celebrating apples on her blog.
